Two of my friends are Ecuadorian and cook pretty amazing food. Here’s our encebollada – a traditional Ecuadorian soup. This one is made with tuna.
The toppings are “pickled” onions – soaked in lemon juice and some spices for a couple hours – and tostones – plaintain chips.
